The Sunday Stocktake
In kitchens around the world, the Sunday night stocktake is universally despised. After a grueling weekend of service, chefs are required to walk into freezing coolrooms with a clipboard and manually count every single item in the venue to calculate Cost of Goods Sold (COGS) and determine what needs to be ordered for Monday.
Manual stocktakes are prone to immense human error, incredibly labour-intensive, and inherently retrospective. By the time you realise you had a massive variance on premium steaks on Thursday, it is Sunday night. The money is already gone, and it's too late to fix the operational issue that caused it.
Continuous Depletion
OPPI completely reimagines inventory management by shifting from periodic manual counts to continuous algorithmic depletion.
Here is how the protocol works:
- Recipe Mapping: Every menu item sold in the POS is mapped to a precise theoretical recipe in OPPI's database.
- Live Depletion: When a waiter rings up a Wagyu Burger, OPPI instantly deducts 1 bun, 200g of beef, 1 slice of cheese, and 20ml of sauce from the theoretical inventory ledger.
- Variance Modelling: OPPI knows that theoretical inventory is never 100% accurate (chefs drop things, portions vary). So, it applies a machine-learning variance model to adjust the theoretical ledger based on historical wastage patterns.
The Real-Time Ledger
Because this process runs continuously in the background, OPPI maintains a real-time, highly accurate ledger of exactly what is in the building at any given second.
You no longer have to wait until Sunday to see your COGS. OPPI can tell the Head Chef on Friday at 8:00 PM exactly what the food cost percentage is for that current shift. If a premium ingredient is depleting faster than it is being sold (indicating theft or excessive waste), OPPI flags the anomaly in real-time, allowing the chef to intervene immediately.
The Sunday stocktake doesn't disappear entirely—humans still need to verify the algorithm occasionally—but it shifts from a weekly grueling necessity to a monthly brief audit, saving hours of expensive chef labour and tightening margins through real-time visibility.
